I usually carve my pumpkin from the night before to a week before. Too long and they start to mold and rot and that will be sure to scare people away.

You should carve a pumpkin 1 or 2 days before Halloween. If you carve it too early, the pumpkin will start to rot/decay. Even better, carve it on the day of Halloween so you can light it before you go trick or treating. We usually carve at least two or three per season. We carve a couple earlier in October so we can always have one on the porch. We also love roasted pumpkin seeds! Then, we carve our last one the night before Halloween, so we can have a fresh one on the porch when trick-or-treaters come.
