If you are running a tournament-legal deck, there is a minimum of 60 cards (but there is no maximum). If you are talking about how many different cards there are ever, than answer is going to be in thousands.
If you look at the bottom of a magic card, near the middle after the copyright (very very bottom of the card) there will be a number a slash and then another number. The first number is the order of that card, the second number is the total cards in that particular set. For example, Peel from Reality has 61/306 at the bottom. This means that it is the 61st card in a set of 306 cards total. This can tell you the number of cards in a set, but not the entirety of magic.
There is a minimum of 60, but no hard upper limit ('Battle of Wits' decks usually contained around 250 cards). However in a tournament, you must be able to sufficiently randomise your deck within three minutes, unaided.
There is also the option to take a sideboard of cards that will contain 15 cards, should you choose to use one.
