There were 31 dynasties. A dynasty stayed the same as long as a pharoah or his descendents were ruling. Every thirty years, there was a Jubilee festival, and the pharoah had to complete an obstacle course priests put together. If the pharaoh passed the obstacle course, he was deemed strong enough to continue ruling. If he failed, and someone else did better, they became the new pharoah. Every time this happened, a new dynasty started.
