The typical serving size is 1/2 cup. Some people will have more, some less. Assuming 1/2 c is average, and considering that there are 16 cups in a gallon (two in a pint, 4 in a quart, 8 in a half gallon and 16 in a full gallon), each gallon of green beans will yield 32 servings. Therefore, 3 gallons of green beans will be enough for about 96 people and should be fine, especially if you are serving other sides.

∙ 10y agoI have never tasted really good frozen green beans and certainly wouldn't inflict them on a large group of people I was cooking for. It's easy to steam 20 pounds of fresh beans and they will love them

∙ 8y agoThat depends on whether the peas are the main course or a side, and how the meal is being served. Are you placing portions on people's plates ahead of time, or are they choosing items and amounts for themselves?
If they are choosing, it will also be affected by how much your group likes canned peas.
If the peas are a major portion of the meal, then I would say no fewer than 40 cans, so each person could have half a can.
If it is a small portion, or if people get to choose for themselves what they are eating, then I think it would be safe to get 20 cans, which is one for every 4 people, taking into account that some people won't want any. I wouldn't really go any lower than that, or you might run out if you have some people who really, really like them. :)

One can will serve about 26 people. 5 cans should cover you. That is called a #10 can, and holds 13 cups. A serving of vegetables is one half cup.
Without knowing what kind of dish you are serving the red beans in, this will be an estimate. For straight red beans, served as a side dish, you can estimate that each person will eat approximately 1/2 c of beans. For 150 people, this is 75 cups. Each can tends to have about 1 cup worth of beans in it, so you would need 75 cans of red beans.
