It depends on the brand but meats dont tend to have any carbohydrates in them, it's the curing/ flavouring (smoking) side that adds the carbs.
The brand I use states that it has 0 carbs in 2 slices but 0.4 in 100g , as long as you don't eat too much of it then you should be able to avoid a carb buildup.
Check the packaging before you buy, all brands are different, and some use different curing methods.
