Habdalah or Havdala is the ceremony marking the end of the Sabbath or Jewish Holidays, performed after 3 stars appear. On Saturday night it's done with a blessing on a cup of wine, smelling spices, a blessing on fire(usually a multi-wicked candle) a blessing declaring the break between Holy and mundane and then drinking the wine. After Jewish Holidays it's done without the spices and fire. If a Jewish Holiday starts Saturday night then habdalah is merged with Kiddush marking the end of one holy day and the start of another (lesser holy) one.
