Habdalah or Havdala is the ceremony marking the end of the Sabbath or Jewish Holidays, performed after 3 stars appear. On Saturday night it's done with a blessing on a cup of wine, smelling spices, a blessing on fire (usually a multi-wicked candle) a blessing declaring the break between Holy and mundane and then drinking the wine. After Jewish Holidays it's done without the spices and fire. If a Jewish Holiday starts Saturday night then habdalah is merged with Kiddush marking the end of one holy day and the start of another (lesser holy) one. There is no habdalah if a Festival ends on Friday night. Read all about habdalah on http://www.answers.com/topic/havdalah
