Windows XP has no hard limitation on the number of hard drives, or at least none that has been published. With the way it handles disk drives, it is far more likely you'll run out of space to put the hard drives before you hit any other limit.

It depends on the size of the disk drive(s) and what kind of bootloader you have. With the right bootloader you can put on as many as your hard-drives can handle.
In WindowsHold down the Windows key and press 'E' to open My Computer. There will be a listing here of all hard disk drives (as well as CD/DVD drives, removable storage, etc.). You can right click on each and click 'Properties' on the popup menu to see what size each is.
