It depends on the degree
A veterinarian has a Doctorate's Degree in Veterinarian Medicine. That requires 3 to 4 years of school after a Bachelor's Degree. Entrance into vet school is one of the most competitive graduate schools to get into. Many that fail to get into vet school go to med school instead!
Usually a B.S, or B.A, but some universities will admit exceptional students without a Baccalaureate degree. Also, many people pick up a Master's degree along the way, but this is not required and some good schools only award the Master's as a sort of booby prize to students that fail out of the PhD program.
Generally, those who do not get into vet school after several tries will either complete their Bachelor's degree in biology or a related major then potentially go on to earn a Master's degree and work in a related biological field.
