It depends somewhat on what kind of meat you are talking about: beef, pork, turkey, ham . . . and whether the roast is bone-in or bone-out.

A 5 lb bone-out beef roast should serve 12 to 14 people, with a serving size between 1/4 lb and 1/2 lb.

My rule of thumb for poultry is one pound per person. You may need to adjust this based on the menu (what else is served), type of meal (quick lunch or all day barbecue), and company's appetites. The same applies to turkey.

A five pound chicken will be approximately 5,000 calories. Depending on how much each person is going to eat, for one meal 5,000 calories would probably feed 6-10 people. It also depends on what you're serving with the chicken. If people will be filling up on other foods, they won't eat as much chicken and you can feed more people.

It is advised that you serve 1/2 to 1 pound of chicken per person. Therefore, 5 pounds of chicken would serve around 5 to 8 people.
