∙ 13y agoI've made potato salad for 50 before using 10 pounds of potatoes. My potato salad also includes celery, green onions and hard boiled eggs which add some bulk. If it is the only side dish being served at all, you might want to up the quantity, but otherwise, it's always worked for me.
