I've made potato salad for 50 before using 10 pounds of potatoes. My potato salad also includes celery, green onions and hard boiled eggs which add some bulk. If it is the only side dish being served at all, you might want to up the quantity, but otherwise, it's always worked for me.

Typically a serving is half a cup volume and weight 4 ounces. There are about 4 servings in a pound of potato salad, depending on density. That would mean 200 servings would be about 50 pounds. That seems to be on the high side.
