The assumptions here are that water is boiling at exactly 373.15 degrees and that you are at a pressure of 1 ATM or 101,325Pa. For instance, at high altitudes, pressure drops therefore boiling point drops and these assumptions would no longer give an accurate estimate.

Calculate the amount of water in a gallon of water. The mass of the steam will be exactly the same as the mass of the water. No mass should be lost.
