The number of potatoes will depend on the number of people and the size of the potatoes. You should use around one fist-sized portion of potatoes (before you start, that is) plus "one for the pot". If the people being served are fairly voracious, you may want to increase the rate to three potatoes for every two people, or something like one each and 3 or 4 for the pot.

depends on the size. Some are large and some are small. Best thing is to put them together and kind of size the food up as a whole. Imagine it being reduced by a small fraction to compensate for the space between the potatoes on the countertop

If you have big eaters, do 2 potatoe per person. So that would be 32 potatoes. If you do not have big eaters, do 1 potato per person. For a happy medium, try 20-25 potatoes.
