I find sausages come in many sizes. Small breakfast sausages are typically about 16 in a pound, while dinner sausages are 5 to a pound. If you are serving dinner sausages I would say 120 for 60 people.

Generally, you want about a 1/4 cup or so of gravy per person. Depending on your tool used for portioning, you may want to make a tota of 17 cups of gravy to cover 60 people.
