In most cases we cant say how many stomachs a dinosaur had. Soft tissue such as stomachs are very rarely fossilised. There was one example however, a Thescelosaurus nicknamed "Willo" (the dinosaur with a heart) that was very well preserved. To the best of my knowledge it only had one stomach.
If we look at dinosaurs closest living relatives the birds we can perhaps assume that since all birds have only one stomach then so would dinosaurs. Another close relative that branched off from the ancestors of dinosaurs was the crocodilians. They too have only 1 stomach.
However this is confused if you look at modern day mammals. Many have one stomach but some such as cows and sheep have more than one stomach. Since we all evolved from the same animal (on a completely different evolutionary line to dinosaurs) evolution must have added or taken away stomachs.
