Two; strug·gling. What an interesting question! The dictionary does say two (American Heritage is well respected as an authority on pronunciation), but who actually says the word that way? What we hear is strug-g'l-ing. Even people who are careful to say "burg-lar" and "chim-ney" and "real-tor" (all two syllables each) still make three syllables of this word. I have never heard a term to describe words of this sort, but they are real.
