Sorry my friend... You've got your math wrong. There are 120 Normal Stars/ Gold Stars, and there are another 120 Green Stars/ Finding Stars. That totals up to 240. Then, once you obtain all those, a special galaxy, called The Grand Master Galaxy appears. There are 2 stars in this galaxy (Especially hard to get). That makes 242 stars. So in total, there are 242 stars in Super Mario Galaxy.
If you have 119 stars, go look through all the galaxies on the Universe Map and find it. If you have 120 stars, it depends if you have Mario or Luigi. If you have Mario, defeat Bowser again and you can play as Luigi. If you're playing as Luigi, defeat Bowser again and that unlocks the Grand Finale Galaxy. Go there with both Mario and Luigi to have a total of 242 stars. And that's all of Super Mario Galaxy.

You have to die a bunch of times on the galaxy. Be warned: You will only get a bronze star not a yellow.( It'll still add to your star total, but your friends might scoff at you if they see the Wii did most of your work.)
