Both Walt Disney World in Florida and Disneyland in California are in subtropical climates and are open pretty much every day of the year, barring extraordinary circumstances (for example: Disneyland was just preparing to open on September 11, 2001 when Certain Events caused management to decide not to open that day; prior to that, the last time it didn't open was in 1994 just after the Northridge Earthquake, when the park was closed so that the attractions could be inspected for damage, while Disney World closed for a couple of days during Hurricane Matthew in late summer 2016). In the early years, Disneyland used to be closed on Mondays and Tuesdays during the off-season, but it's been many years since that happened.

Miami is about 4 hours from Walt Disney World. I would just enjoy a few days in Miami and atleast 4 in Disney, 6 if you have children or want to see more. It would take 2 weeks to see everything at Disney
