Some background information:

Cognac is distilled in two stages, so called "Chauffes"

  • first stage is called "Brouillis" with an abv of 28-32%
  • second heating is called "La Bonne Chauffe"
  • second distillation is called "repasse"

Use of a traditional Charentais still of a total capacity not exceeding 30hl and a maximum load of 25hl for the "bonne chauffe".

"The pipe" is referred to the cooling tank where the pure alcohol obtained from distillation is cooled down to liquid.

The Maximum alcohol content of the distillation process is 72% by law.
