Fill the differential until your hooked finger in the filler hole gets wet, no more lube; extra lube is not a good idea. Re-install the plug. clean up any spilled lube and go wash your hands.

The cooling system capacity of a 1999 GMC Yukon Denali is 17.5 quarts. This is also equivalent to 16.5 liters.
Gear oil is actually an oil as used in transmissions and differentials. grease is thick sticky stuff (possibly like the one that reckons oil is grease) that wouldn't be much good in a gearbox as it would be unable to lubricate all the parts
It will hold almost 3 pints.

It would depend on which seal. There are several seals. Some are easy to replace while others are difficult.

If the normal is 80w90 gear oil ( or another thick oil )then it is fine to use Lucas oil stabilizer. You just have to be careful nowadays, not so much with differentials but the manual transmissions, many manufacturers are going to atf.
