To see them through the winter, the average colony of honey bees needs about 35 pounds of honey in their stores. They may make more, and it is this surplus that beekeepers will collect. Beekeepers may even take most of the honey, but will replace it by feeding the bees with sugar syrup.
The amount of honey that can be collected depends on a number of factors: the size of the colony; the weather through the summer; the amount of available forage plants; and the amount of space in the hive, among other things. At the end of the season there could be anything from no honey at all to 50 to 100 pounds in a hive, and although not common there are records of much more from one hive in a season.
