Because you are asking, I'm assuming that you are not a licensed caterer. This really isn't any of my business, but because you state that you will working with chicken, LOTS of chicken, I'd advise you to be damned careful! Watch your holding temps, your defrosting methods, how long the chicken sits before being processed and also be super sure that you are meticulous about washing utensils, cutting boards, pans and hands often and/or between different tasks.
Having said that, If I were you, I'd call around to ask what other caterers would charge for a similar meal. That will give you a ballpark figure. You have to know your market too. Where I live, in New Mexico, most folks are blue collar workers who would have only a very special event catered. Cost would certainly be an issue. Right off the top of my head, I'd guess that I could get away with $10 to 15 per hour. This would not include food cost or the cost of operating your kitchen.

I work for a few catering companies & make in between $18 & $23/hour & tips (if any).
