Spackle paste is for smaller holes and dries more quickly.
You don't put 'spackle' on at all. After taping the drywall seams you 'mud' them with drywall compound. -It is a totally different substance from 'spackle', which should be used only to fill small holes and irregularities in wall.

To fix a ceiling that was spackled with drywall mud instead of spackle you can use sand paper to scrub it. I don't understand why you have a problem with it. That's quite common. you normally just paint primer over it. Using sand paper to scrub it is going to be extremely dusty.

You put post protectors in the drywall, and don't do it at the end of the drywall.
