The temporary tissue in the eggshell that functions similarly to the placenta in humans is called the "chorion." In avian eggs, the chorion assists in gas exchange and nutrient transfer between the developing embryo and the external environment, much like the placenta does in mammals. It plays a crucial role in supporting embryonic development until the chick hatches.
The yolk is a source of energy for the embryo to live off of once the egg has been laid. The embryo is actually a part of the yolk membrane, a mere little white dot on the membrane of the much larger yolk sac. Since the embryo has no external source of energy to grow from, unlike mammals grown in the womb of their mothers do, the yolk sac acts as that source of energy for the embryo and chick fetus to grow from. Fetal mammals, in comparison, have a placenta and umbilical cord that anchors that fetus to the mother, allowing the mother to give nutrients to her fetus from the external food sources she eats. The yolk is high in saturated fatty acids, protein and carbohydrates which is everything a growing chick-fetus needs to grow in the egg. A few days before the chick is hatched, the yolk sac is enveloped by the chick into the chick's abdomen. This continue to provide a source of energy for a day or two after the chick has been hatched, but is absorbed into the chick's abdominal cavity once all the energy has been used up and the chick begins to eat on its own.
The precise color of an embryo will change as it develops, but for much of development, pigmented cells have not yet formed, so the embryo will mostly be white-pink in color. The embryo proper will be white or off-white, but the circulatory system forms pretty early so the red of the blood moving through the embryo gives it a pinkish hue.
At 6 week after fertilization there is what we call embryo which is unborn baby in uterus in early stages of development and the body features of growing baby in the embryo are nor much developed.

As I'm not an expert but have had many parakeets. If the hen or female broke the shell that is fertile she may be helping the chick to break free. If she did this to an egg that is not fertile, she may have sensed this & wanted to eat the shell & contents. Both are very nutritious providing the hen with much needed calcium. In the wild they may do this to keep predators from going after an egg that's not fertile or even an embryo born dead.
The endosperm does. It acts much like yolk in an egg does for the embryo developing in the egg: provides the necessary nutrients for the developing embryo to grow from.
