I believe the GVWR rating for that truck is 8800lbs. That means the maximum legal weight sitting on those 4 tires is 8800lbs (assuming you have not registered the tags for a lower weight)
So now you need the weight of the truck as equipped to travel with passengers, full tank of fuel etc. Subtract that weight from the GVWR and that is your legal carrying capacity.
The larger the F250, the lower the carrying capacity due to the truck weighing more. Worst case scenario is the crew cab 8' bed 4x4. That truck full of fuel with one adult in it will likely weigh in at aprox 7400lbs leaving only 1400lbs for additional passengers and payload. Remember if a trailer is connected the hitch weight comes out of that carrying capacity too!

The 2003 Ford F250's never came with a 7.8 diesel ... they did however come with a 7.3 diesel turbo charge and are good engines. As for transmissions , all depends what kind ... manual or automatic ?

5w-30 or 5w-40 is what is recommended by VW for use in your Beetle. If it's the 1.9L Diesel, use 5w-40 Diesel oil. Regular oil doesn't have the added detergents etc that this diesel brand does.
