Judaism has undergone many transformations since that time. The type of Judaism practiced by religious Jews today, called "Rabbinic Judaism" has been around almost 2000 years.
Those things which the Rabbis did add, such as the Rabbinic decrees (Hanukkah candles, etc.), never came to replace a Torah-command or alter it.
These decrees are either added customs (such as saying the Hallel prayer); or safeguards (muktzeh, eiruvin, etc.), to preclude violating a Torah-command.

To be Jewish can mean you either practice the Jewish religion, or are from a Jewish decent. It is both a race and a religion. Someone that is culturally Jewish may not practice the religion, but has a Jewish heritage. Likewise, people that do practice the Jewish religion do not have to be culturally Jewish, or have Jewish ancestors.
