The answer of this partly depends on where you live. If you live in a tropical climate, it's best to keep your beans in the freezer, but in other locales, you can keep them on the bench. Importantly, don't keep them in the fridge. Also, the most important part of storage is the container. Most coffee roasters sell their beans in foil bags which have a one-way valve. This keeps the light out (and stops damage to the roasted beans) and allows gases to escape while not letting oxygen in. If you store beans incorrectly (unsealed, in the fridge) they will quickly go stale. If you store coffee ground and in the wrong container, it can take on the flavours of the food around it.
