Frozen, or unthawed, the tail should be boiled at least 30 minutes on medium before you add your green beans, greens, or any dried beans. Once you add your vegetables, the tail cooks nicely among your dish. After an additional hour the tail should start to separate from the bone. This means the tail is tender and can be broken up with a fork. If the tail is large cook it for 45 minutes before adding any vegetables. Be sure not to over cook the veggies!
