The sub floor should not be a problem if it hasn't been one for other reasons. What is most important is the installation of cement board over the sub floor to keep the tile and grout from cracking. Most marble tile used in residential buildings is not so heavy as to create weight issues.

Marble is strong enough for paving, if it is thick enough. Usually I specify travertine marble in the landscapes I design. When I design a marble paved area that is to be sand-set in a residential setting, the marble has to be at least 1-1/2 inches thick, and ideally 2" thick, otherwise it will be too thin and will crack. I also make sure to purchase high quality marble directly from an importer that provides quality stone. Even if the stone is from the same quarry, some marble is of higher quality than other stone. If the marble is thinner, it must be set onto a reinforced concrete slab and mortar set.

You should not put eatable hay on the floor of a stall. The floor should have straw or wood shavings to absorb the urine. It should be at least 3 inches thick or deep. Cleaning the stall daily will help saving on bedding.
