Turning the fuel screw on a Cummins will determine the fuel flow tot he engine. If the screw is set too high of low then the engine will not run properly and could cause engine damage.

Their injection pump is set too rich, and lets more diesel into the engine than the engine can burn. The partially/badly burned diesel is what comes out as black smoke.
Could be low coolant, but most diesel motors are set to shut down if that occurs. You could have broken a fan belt, you could have a bad thermostat, or a bad water pump. The engine fault codes might be able to pinpoint it for you, as well.
