This depends on the pocket. You may be able to iron the raw edges of the material under (towards the "wrong" side) and then sew along the side and bottom edges to secure the pocket. If you want a pocket hidden along a seam you will have to assemble the pocket, and attach it to the item as you sew the seam or waistband it is attached to.
