Of course people still grow cotton, but in the years leading up to the Civil War cotton was grown in the South. It was a difficult crop to grow, and was actually on the decline until Eli Whitney's cotton gin was introduced. This simple machine pulled the cotton away from the seeds. Combine this with free slave labor, and cotton became much more profitable. However, as the soil exhausted, the crop moved further west. It did particularly well in an area called the Black Belt, named so because the soil was so dark and rich. Soon, all the South proclaimed, "Cotton is King!"
Cotton is currently picked by machine. They used to have slaves pick the cotton in the south by hand. You seem to have forgotton the people (both white & black) that picked cotton after the slaves & before the cotton picking machines.
They picked cotton by hand. Hand picking was the only option until the 1950's when cotton picking machine was developed. Eli Whitney patented the cotton gin on March 14 1794 to remove the seeds and pods from the picked cotton

There is no "cotton chopper". There is a cotton picker and it was developed in the early 1900's. Before that cotton was hand picked. Cotton grows on a bush type plant that forms flowers that becomes cotton bolls. To pick the cotton the plant has to be killed and then the cotton can be gotten off the boll because it is open. This is not easy because the raw cotton is tough to work with and very dense. The cotton picker goes through the field than pulls the cotton off the bolls. It takes several times to get all of the cotton. When cotton was hand picked it was put into bags until full.
During the Civil War, there WAS no machinery to pick cotton- it was picked by hand. The machine that was used to separate the cotton fiber from the seeds was the Cotton Gin (as in engine).
Cotton had to be picked by hand and the invention of the cotton gin allowed for more cotton to be processed. Cotton is a versatile material and can be used by many industries especially textile and clothes.
In today's society it is picked by a machine in the fields. Back before the machine was invented slaves or others did it by hand and picked out the seeds. Now the machine sorts and picks out the seeds.

Well to start off, well made hand-picked cotton from slaves was very rare and costly due to the amount of time needed to pluck the seeds out.
