Well that's simply too bad. Virtual machines are very limited in their ability to emulate a hardware accelerated video card. Even if they could, the performance would be so abysmal it wouldn't be worth it.

Just about every pc game on the market is compatable with dell pcs running windows. If you are running windows vista on a current gen pc with a current gen graphics card, you should have little problem playing most pc games. MythTV would need access to the tuner, which it can't get through a virtual machine. And gaming or intensive photo editing will perform very badly, if at all, in a VM. Your best option is to dual-boot, with both operating systems having access to hardware directly.
Any of the dual-headed Radeon 2400-2600 cards should work fine. Size the OS with what you want the machine to do, a sever is what it is, not a gaming machine.
