I have had several batches of Chicken & Dumplings spoil. My experience is to NOT put the dumplings in the fridge until they are room temperature. Also, do not leave them in a crockpot while they cool. The crockpot tends to hold the heat longer. If you have a large batch, I would split them into two smaller pots. I don't know why this happens, but it is a heart breaker after all of the mess and hard work that is put into the dumplings.

you should know whether your chicken is spoiled before cooking. Smell it and if you smell even the slightest bad odor, throw it out.
No, spoiled chicken should not be consumed for any reason and cooking will not ensure safe consumption. When in doubt, throw it out.
As long as the chicken is not spoiled and has been kept in the refrigerator, it should not be dangerous.

If they are improperly prepared or spoiled.
Spoiled chicken is one of the worst odors that I have ever smelled. That is a good guide, but you can still get sick from eating chicken that is starting to spoil. When in doubt - throw it out.
If you know it is spoiled, don't eat it. If you have been at a picnic and everyone is getting sick, it might not have been the chicken. You might not be affected, but if you start to feel ill, let your doctor know that you might be affected by a foodborne outbreak.
