Great question! The cathode rays are just electrons shot towards the screen. When they hit the screen they give up their energy to the fluorescent screen in the form of light. The electrons themselves are now drifting around aimlessly and are sucked up by the anode(s) that is not far behind the screen. The exact details depends on the CRT construction and application.
