If a flint knapped flint can be hundreds of times sharper than a scalpel why do surgeons use scalpels?

It is not uncommon for surgeons to use other materials for their scalpel blades. Flint happens to be very brittle. It is actually fairly common to see obsidian blades in very precise delicate work. Obsidan blades being made from volcanic glass can be sharpened to blades finer than flint.
