The two main types of rocket engines are Solid fuel rocket engines and Liquid fuel rocket engines.
You use fins and a nose cone on a bottle rocket because the cone reduces the drag on the rocket, and the fins help stabilize the rocket.
It depends on the type of rocket.

Yes rockets and missiles need aerodynamics to fly correctly HOWEVER it is mechanical and electrical engineers who focus on the building of a missile/rocket. There are many aspects of a missile/rocket and an aerospace engineer would have no clue how to design/build it himself. ------------ I beg to differ. Aerospace engineers with proper training design over 60% of all missiles and rockets. ------------ Aerospace Engineers apply fluid dynamics not only for the aerodynamic characteristics of a rocket/missile, but also its propulsion. Mechanical and electrical engineering are only but a portion of the development of these systems.
