Probably not. Horses, for example, are livestock. Vegetarians don't eat horses, and neither do the vast majority of non-vegetarians, especially those in the United States. And yet, horses are not extinct in the U.S. People continue to keep horses as companions, and there are wild (feral) horses in parts of the world, including the U.S.

If people stopped raising cattle for food, feral horses would not be rounded up and sterilized by the government, so rather than go extinct, they would likely increase in number.
