Its doubtful any color would "bleed" through if you are only talking about a gray application for sticking the stone on. You will have to make sure you scrap your joints after the stone is stuck on to make sure it doesn't "show" when you put the grout on.
So long as the the grout "completely" covers your base application you should be fine.
