The direction of trave of the nitrogen released will depend on the temperature of both the air in the room and the nitrogen. Cold nitrogen in a hot room will sink, hot nitrogen in a cold room will rise. If both temperaures are about the same the bouyancy will essentially be neutral as air is about 79% nitrogen

Only if you have leaks or problems.
As waste falls down a pipe it creates a positive pressure in front of it & a negative pressure behind it. To allow waste to flow down a pipe properly these presures are balanced via a soil vent pipe. Im not a builder, but sounds like there may not be a soil vent pipe on your system, or at least an 'air admittance valve' (AAV can sometimes be used if the soil pipe cant be taken externally).

Check pipe size for hot water or if galvanized pipe used, pipe could be clogged inside with rust and scale.
It doesn't mend the pipe. The pipe will still have a leak. However, you can use liquid nitrogen to freeze the water in a pipe and create a 'freeze block' which will prevent more liquid from getting to the leak. Once the freeze block is in place, it is much easier to repair the pipe leak.
