It's a very hot place, and the salt factories evaporate the water (to isolate the salt). Since it doesn't rain over there, the Jordan river is the only thing giving water to the dead sea. The dead sea is actually drying up.

very little water flows in the Jordan river into the dead sea, most of it is stopped in the kineret (sea of galili) and used as Israels main water supply. The rest evaporates, after all the dead sea area is one of the hottest places on the planet.

Water leaves the Dead Sea by evaporating. There is no outlet. This also why it is the Dead Sea- evaporation over thousands of years has left behind the salts and minerals- far too salty for fish to live in it.

The heat of the sun evaporates a significant portion of the water in the Dead Sea, enough to offset the inflow from the Jordan River. In fact, the current salt-mining in the Dead Sea is resulting in a decrease in the quantity of water in the Dead Sea.
