The earth is held in its orbit due to the gravitational effect of the sun. Were the sun to lose its gravity, the earth would fly off into space and quickly freeze.
to me i think we observe them to know which is going to happen or to notice when an eclipse is going to happen

The majority of the Earth is molten (liquid). The Earth never truly stops moving.
in a few billion years time the sun is go to melt it.
If the earth got pulled in closer to the sun, or if the sun expands significantly, then the earth will get much warmer. That said, nothing like that is going to happen for a couple billion years yet.
It is not known whether this will ever happen, or when. But this even is not likely to happen any time soon.
A new moon is when the Sun is illuminating the side of the moon that is not visible from Earth. This is going to be when the moon is in the sky during the day. A lunar eclipse can only happen at the other side of the moon's orbit. It is when the moon passes directly through the shadow cast by the Earth. A solar eclipse is when the moon's shadow falls on the Earth. See the link for an astounding picture of exactly that. Eclipses do not happen every orbit because the moon is inclined about 5° from the Earth's equator.
