It depends on how well you can learn by visual and/or auditory methods. If you learn quite easily by watching someone do something, or by hearing or reading directions, then learning by doing isn't that important.

If you're talking about something like sports, where you need to practice, then learning by doing is more important. Your body needs to go through the movements enough times to make those movements second nature, so you don't have to think about doing them.
