Almost any class makes use of a single resource - mana for casters, rage for warriors, runes and runic power for Death Knights, focus for Hunters, Energy for rogues.
The only exception to this, and probably also in Cataclysm, is the Druid. The Druid uses mana in caster and Owlkin form, Energy in Cat form and Rage in Bear form.

Blizzard Entertainment still has yet to release a solid release date for Cataclysm. Rumors and speculation have it set to be released in the latter part of 2010, but Blizzard, typically, will not confirm or deny this. Cataclysm will feature a revamping to old-world azeroth (along with flying), new raids, re-crafted zones, the addition of two new races (goblins and worgen), professions getting more recipes and the removal of specializations, and much more.
Currently, yes, paladins are one of the more powerfull classes....all around. Retribution paladins can dish out a ton of damage, heal themselves, and continue dishing out more. Note: this may change though when Cataclysm is released as they are doing some major overhaul of the mechanics of most of the classes. Currently on the PTR, they are weak unless you have uber gear.

For Hunters, you need Ranged Attack Power (RAP). This is because hunter's do not use melee attack power. Hunter's get this mainly from agility, and some gear. For casters/healers it is Spellpower (SP). This is mainly received from talents and gear. SP also helps healers in that the more SP that they have the more they heal each time.
