the easiest way is to use rock attacks from Pokemon weaker then Zapdos. This way you're weakining it with less of a chance of killing it. You should also use ultraballs instead of pokeballs or greatballs, they have a higher chance of catching it. However, I use pokeballs all of the time, and I catch it most of the time, so it's whatever you prefer.
You have to trade it from Firered/Leafgreen in Pokemon firered/leafgreen you can find zapdos in power plant, but you need surf to get there.

It is possible to trade Fire red or leafgreen of other games to emerald with zapdos. Than you got a zapdos on emerald. It can't be caught on wild.
Zapdos will be at the Power Plant. Make sure to save before battling it to ensure success and not a FAIL at catching it. This is a freaking legendary Pokemon you won't be seeing again in the game, so catch it, don't KILL IT!

LeafGreen you can get Articuno, Zapdos, and Moltres, then you can catch Mewtwo. After that you can get Raikou(if your starter was Squirtle), Entei(if starter was Bulbasaur), or Suicune(if starter was Charmander). Lugia and Ho-oh can be found too, as well as a form of Deoxys
