A character refers to a person's moral and ethical qualities, while attitude refers to a person's outlook or way of thinking and feeling about something. Character is more about who a person is, while attitude is about how they approach things.
You should be able to by going to Control Panel and clicking "Regional and Language Options." Go to the "Keyboards and Languages" tab and click change keyboards. From there you should be able to change the default language. If it's not listed, click "add."
When you are putting Yoshi into the hoop, (when you pick your character) press up on the control pad. This will change his color.
