Its because vampires have supposedly really tough skin and diamonds are the hardest stone. They therefore combined these 2 ideas so that his skin shines like diamonds to show that it's tough.

Edward is a type of vampire unlike the classic one that burns in the sunlight. He is a Daywalker Vampire. Daywalker Vampires are vampires (actually not invented by Stephenie Meyer) that were supposedly seen in the eighteen hundreds. An anonymous man wrote down details of the vampire he had seen.

Daywalker Vampires aren't very well-known, and therefore people think Stephenie Meyer made them up. The Daywalker Vampire can't feed off of animals, though (this is why I think Stephenie wrote purely out of what she saw in her dream), but have to drink human blood or no blood at all. And they actually do burn in the sun, but it takes time for the sun to melt the skin because it's basically diamonds.
