literally: it was Jem and Scouts' Christmas presents and they do shoot stuff with them... scout even starts aiming at miss maudie's butt

symbolically (which you are most likely looking for): it was just another excuse to portray the mockingbird symbolizing innocence whereas they tell the children that it is a sin to kill a mockingbird or songbird. so don't shoot one

anything else i missed?

Why do the children use linen to kill a mocking bird?

In the novel "To Kill a Mockingbird" by Harper Lee, the children, Scout and Jem, use air rifles to shoot at birds, not specifically mockingbirds. The mockingbird is a symbolic and innocent creature, so harming one would go against the novel's theme of the destruction of innocence and the consequences of prejudice and injustice.
