Because if there happens to be some areas with more gas than others gravity in these areas will tend to pull atoms/molecules towards it and cause a bunching effect. In a room gas disperses around the room pretty evenly because the molecules hit one another and bounce off but in space they are much further apart so the gravity influence is the more effective of the two.
