1. Go to settings
2. Go to "Audio/Video"
3. Scroll to the bottom
4. You will see "Gore: High"
5. Select this and set it to "Low"
Although it doesn't remove the blood, it does remove the gore.

There is an option in the multiplayer settings to set gore to low. You can further remove it by right clicking L4D2 in your Steam game list, going to properties, then launch options. Then putting "-lv" (with no quotes). This will put the gore level to the same as the Germna/Australian version. There is no option to remove the language.
