They both had lived so long and taken so much blood that they became statue like in their appearance. It so happens that they didn't have to take blood anymore because they were so old. It was one of the perks of being that old. One of the many gifts they had gotten.

In the book "Queen of the Damned" by Anne Rice, Akasha and Enkil became like living statues due to a ritual involving their blood and the infusion of powerful dark forces. The ritual was performed by the ancient vampire queen Maharet and her sister Mekare as a way to trap Akasha and Enkil in a state of near-immobility. This was done to prevent the risk of them causing destruction and chaos in the world.

What problems can arise when symbols take on too much importance in a religious tradition?

The symbols become the main focus of worship and not what they symbolize. Most christian churches have a symbolic cross which symbolizes the death of Christ. Others do not which may symbolize that they believe in a living Christ. Statues in some churches are worshiped and not what they symbolize. The statues become the very god they represent.
